pumpkin party!

Today we had a party for our nieces and nephews! 
It was fit with everything pumpkin

We lunched on vegan soup in pumpkin bowls (recipe below)
We snacked on pumpkin spiced marshmallows
Little people painted pumpkins & collected pumpkin loot

::Seeing five little faces light up like jack-o-lanterns was a thrill::

Fall is in full swing, my friends!






* Vegan squash soup

Ingredients:
1 butternut squash
1 acorn squash
1 can of coconut milk 
4-5 cups of good organic veggie stock  
salt and pepper to taste

Roast the squash in the oven, 350 degrees (cut in half, salt/pepper, olive oil)
roast until squash are soft by poking with a fork and it slides in with little resistance (approx 50 min)
cool squash
scoop squash out, discard the skin

In a pot add veggie stock, bring to a simmer not a boil
add squash
cook for 30 min 
let cool for 30 minutes
blend soup in blender 
ladal back into pot 
add coconut milk
taste, add salt and pepper as needed
simmer for 10 min

It's magically delicious!
